lately every time i stomp the car for a couple runs or even all the way up to redline a couple times my clutch gets fucking stiff...when i mean stiff this shit feels like its gonna break the clutch cable *and already has 2 times*
i just replaced the clutch with a ram hd kit from jegs and ever since then ive had problems with cables and the stiffness...
would replacing the pressure plate with a different one help? or any other suggestions...

the pressure plate is what dictates the stiffness of your pedal, if its getting hard at different engine speeds then either you have one with wights that pushes harder at higher rpms, or your throwout bearing is going bad/not sliding on the shaft well.
sometimes when they go bad the bearing will get hot and expand and be tighter on the shaft. i would replace the bearing, polish the shaft up nice and regrease it all.

yeah i know its a ford, we've had this one since new and i never remember the pedal feeling like this until after the clutch change...im ordering the new throw out bearing and a new mmr pressure plate...this is kinda disappointing :/

you wont need a pressure plate unless its designer to grab tighter with higher rpms, then it wouldnt be a problem
my sugestion is the bearing

pressure plate im getting a spanking deal on mmr pressure plate usually 189 im getting it for $50 from a forum member...
might as well give the plate a shot too
